Daiquiri



2 oz light Rum

juice 1/2 Lime (or lemon)

1 level tsp sugar

Dissolve sugar into juice

Add cracked ice, Rum, Shake well, strain into cocktail glass

Frozen Daiquiri



Ingredients as above

Mix with fine cracked ice in electric blender, or shake well by hand

Pour unstrained into champagne glass

Top with cherry

Bacardi



2 oz Bacardi Rum

juice 1/2 lemon or Lime

1/2 tsp Grenadine

Shake well with cracked ice and strain into cocktail glass.

Hot Buttered Rum



3 oz gold label Rum

1 tsp butter

3 or 4 cloves

hot water sufficient

Pour Rum in glass or pewter mug, place teaspoon with butter in the Rum

Add piping hot water

Sprinkle cloves on top

Stir with spoon and allow to steep for a few minutes.

Egg Nog



Beat separately yolks and whites of 6 fresh eggs.

Add 1/2 cup sugar to yolks while beating

Add 1/4 cup sugar to whites after they have been beaten very stiff.

Mix egg whites with yolks.

Stir in 1 pint cream

1 pint milk

Add 1 pint Whiskey

and 1 oz Jamaica Rum

Stir thoroughtly

Serve very cold with grated nutmeg

(Makes 5 pints)

Yellow Bird



3 oz Orange Juice

1 oz Lime juice

1-1/2 oz Banana liquor

2 oz Pineapple juice

1-1/2 oz Rum

1 tablespoon Kahlua



Put all the ingredients in a blender with a little ice and blend till smooth. Pour into a large goblet

Decorate with slices or Orange, Lime, Lemon, and Pineapple and a Maraschino Cherry.

1 oz White Rum

1/2 oz Cointreau or Triple Sec

1/2 oz Blue Curocoa

1 oz Cream



Shake ingredients well with ice and strain into a cocktail glass

A delightful after dinner cocktail

Banana Cooler




4 ice cubes broken

Juice of 1 lime

2 tsp confectioners sugar

5 tbsp white rum or pineapple juice

1 ripe medium banana, cut into chunks



In electric blender, combine half the ice, the lime juice, sugar, rum and bananas



Blend with cover on at high speed 1 minute, or until smooth



Add remaining ice, blend 1 minute more

Serve in stem glasses

Makes 2 servings

English EggNog




6 egg yolks

1 cup granulated sugar

1 pint cognac

1 cup light rum

2 quarts light cream

6 egg whites

1/2 cup confectioners sugar



In large bowl, beat egg yolks until thick

Gradually add granulated sugar, beating until light

Slowly stir in cognac and rum

Add 1-1/2 quarts cream and about half the egg whites, beating until very well combined

Beat remaining egg whites until foamy

Gradually add confectioners sugar, beating well after each addition

Continue beating until soft peaks form when beater is slowly raised

Gently stir egg whites and remaining cream into egg yolk mixture

Refrigerate, covered, until ready to serve

Makes about 3-1/2 quarts

Coffee Nog




1/2 cup whipping cream

1/4 cup sifted powdered sugar

1/2 tsp vanilla

6 beaten eggs

3 cups milk

1/3 cup sugar

2 to 3 tsp instant coffee crystals

2 to 4 tbsp coffee liqueur

2 to 4 tbsp light rum

1 tsp vanilla instant coffee crystals (optional)



Beat whipping cream, powdered sugar, and 1/2 tsp vanilla in small mixer bowl till soft peaks form set aside



Combine the beaten eggs, milk, sugar, and coffee crystals in large, heavy saucepan

Cook and stir over medium heat till mixture just coats a metal spoon

Remove from heat

Immediately stir in coffee liqueur, rum and 1 tsp vanilla

Pour into 8 oz cups, dollop with whipped cream

Sprinkle with coffee crystals, if desired

Makes 6 (8oz) servings

Honolulu Cup




3 tbsp Jamaica rum or ginger ale

1 tbsp lime juice

1/4 cup pineapple juice, frozen or canned

1-1/2 tsp maraschino cherry juice



In a jar with a tight fitting lid, combine all ingredients

Add cracked ice, and shake briskly

Strain into a tall glass that is two thirds full of crushed ice

If desired, garnish with sprig of fresh mint, pineapple chunk, and maraschino cherry

Makes 1 serving

Colonial Hot Buttered Rum
2 cups brown sugar
1/2 cup butter
1 pinch salt
2 quarts hot water
3 cinnamon sticks
6 whole cloves
2 cups rum
1 cup sweetened whipped cream
1 dash ground nutmeg to taste

♦~♦~♦~♦
Combine the brown sugar, butter, salt and hot water in 5 quart slow cooker. Add cinnamon sticks and cloves. Cover and cook on Low for 5 hours. Stir in rum.
Ladle from the slow cooker into mugs, and top with whipped cream and a dusting of nutmeg.

Hot Buttered Apple Rum




4 inches stick cinnamon, broken

1 tsp whole allspice

1 tsp whole cloves

7 cups apple juice

1 to 1-1/2 cups rum

1/3 cup packed brown sugar

butter or margarine



Tie the cinnamon, allspice, and cloves in a 4 to 6 inch square of double thickness, 100 percent cotton cheesecloth

In a 4 to 6 quart crockery cooker combine spice bag, juice, rum, and sugar

Cover cook on low heat setting 7 to 8 hours or high heat setting 3 to 4 hours

Discard bag

Ladle hot punch into cups

Float about 1/2 tsp butter a top each serving

Makes ten 6 ounce servings

Vanilla-Rum Cola's




Small Ice Cubes

3 cups cola

1 cup plus 2 tbsp dark rum

3/4 tsp pure vanilla extract

6 orange wedges or 4 sliced kumquats



For each drink

fill a glass 3/4 full with ice

Add 1/2 cup cola

3 tbsp rum

and 1/8 tsp vanillaSqueeze orange or kumquats into drink and stir
