| Chocolate Pear Torte 1 pkg (8-1/2 oz) chocolate wafers1/2 soft butter or margarine2 cups sifted confectioner’s sugar2 eggs1 tsp peppermint extract2 cans (1lb, 14oz size) pear halves, drained1 cup heavy cream Lightly grease a 9 inch spring form panWith rolling pin, crush cookies between two sheets or waxed paperMeasure 2-1/4 cups crumbsIn large bowl, with portable electric mixer, beat butter with sugar until lightAdd eggs, beating until well combinedWith rubber scraper, fold 2 cups cookies crumbs and the peppermint extract into butter mixtureUse half of mixture to cover bottom of prepared pan, refrigerateReserve rest of crumb mixtureCut each pear half into quarters, lengthwiseArrange half of pear sections over crumb layer, radiating from center, in petal fashion, leaving a half inch margin at edgeCover pears with reserved half of crumb mixture, in an even layer, refrigerate 30 minutesRefrigerate 8 pears sections, for decorationWith rest of pear sections, make another layer, petal fashionRefrigerate 6 hours, or overnightTo serveWith sharp knife, loosen side from pan, remove panWhip cream just until stiffSpread on top and side of torteArrange 8 reserved pear sections on top, petal fashionCoat side with remaining 1/4 cup cookie crumbsMakes 8 servings | |
