Chocolate Chiffon Pie


1 tbsp unflavored gelatin

1/4 cup cold water

4 eggs separated

2 oz squares chocolate

1/4 tsp salt

1 tsp vanilla

1 vanilla wafer pie shell



Soften gelatin in cold water 5 minutes

Mix boiling water and chocolate until smooth

Add gelatin to chocolate mixture and stir until dissolved

Add slightly beaten egg yolks

1/2 cup sugar

Salt and vanilla beat thoroughly

Cool until mixture begins to thicken

Beat egg whites until foamy, beat in remaining sugar gradually and fold into gelatin mixture

Pour into pie shell and chill until firm

Spread with whipped cream topping before serving

Makes 1 pie
