Cherry Pie


The common red cherries are best for pies

Stoning cherries is also desirable



4 cups red cherries

3/4 cup sugar

2 tbsp flour or 1-1/2 tbsp arrow root



Line pie pan with plain paste, sprinkle lower crust with a little of sugar and flour mixture

Mix balance of sugar and flour mixture with cherries and fill crust

Place top crust and

Moisten edge of under crust

Place on top crust, pressing edges of crusts well together

Bake for first 10 minutes in hot oven 450 then reduce to 325 to finish baking

Requires 30 to 45 minutes for baking
