Cream Pie


1/2 cup sugar

2 tbsp cornstarch

3 tbsp flour

1/2 tsp salt

1-1/2 cups milk, scalded

2 egg yolks

2 tbsp butter

1/2 tsp vanilla

2 egg whites

3 tbsp sugar



Mix sugar, flour, and salt in bowl

Stir in scalded milk return mixture to top of double boiler

Stir over boiling water until mixture has thickened

Cover let cook while beating egg yolks

Stir a little of the hot milk mixture into yolks

Stir diluted yolks into contents of double boiler

Cook 1 minute

Remove from the stove

Stir in butter and vanilla and cool

When cool, pour into previously baked cool shell and cover with a meringue made by beating the egg whites until they hold their shape, and then beating in the 3 tblsp of sugar gradually

Pile lightly on pie, being sure it touches crust all around and bake in a slow oven 300F until browned about 20 minutes
