Butterscotch Pie




6 tablespoons butter

1-1/2 cups brown sugar

2-1/2 cups scalded milk

2 eggs

3 tablespoons cornstarch

4 tablespoons granulated sugar

1/2 teaspoon vanilla

1 Pie Shell



Cook the butter and brown sugar together until it turns a rich brown

Add scalded milk and heat until the sugar dissolves

Beat the yolks of 2 eggs slightly, add the cornstarch and pour the milk mixture over gradually, stirring continually.

Flavor with 1/4 teaspoon vanilla and pour into prepared pie shell.

Bake for 10 minutes at 450F and then reduce the heat to a moderate eat 325F until the custard is firm about 40 to 50 min.

Cover with meringue made of beaten whites to which the granulated sugar and 1/4teaspoon vanilla are added gradually

Brown for 10 to 15 minutes.
