| Butterscotch Pie 6 tablespoons butter1-1/2 cups brown sugar2-1/2 cups scalded milk2 eggs3 tablespoons cornstarch4 tablespoons granulated sugar1/2 teaspoon vanilla 1 Pie Shell Cook the butter and brown sugar together until it turns a rich brownAdd scalded milk and heat until the sugar dissolvesBeat the yolks of 2 eggs slightly, add the cornstarch and pour the milk mixture over gradually, stirring continually.Flavor with 1/4 teaspoon vanilla and pour into prepared pie shell.Bake for 10 minutes at 450F and then reduce the heat to a moderate eat 325F until the custard is firm about 40 to 50 min.Cover with meringue made of beaten whites to which the granulated sugar and 1/4teaspoon vanilla are added graduallyBrown for 10 to 15 minutes. | |
