Blueberry Pie

3 to 4 cups blueberries

2/3 cup sugar

1/2 tsp cinnamon or 2 tbsp lemon juice

3 tbsp flour or 2-1/2 tbsp cornstarch or arrowroot, for thickening

2 tbsp butter (optional)

Fill crust with berries which have been mixed with cinnamon, or lemon juice, sugar and thickening

Sprinkle a little of the flour mixture over bottom crust before adding fruit to keep crust from soaking

Dot top of fruit with butter

Moisten edge of under crust

Place on top crust, pressing edges of crusts well together

Bake for first 10 minutes in hot oven 450 then reduce to 325 to finish baking

Requires 30 to 45 minutes for baking
