| Pennsylvania Tomatoes 6 large tomatoes (about 3 lbs)1/2 cup unsifted all purpose flour1/4 lb butter or margarineLight brown sugar1 tsp salt1/4 tsp pepper1-1/2 cups heavy cream Trim a slice from top and bottom of each tomatoCut each tomato, crosswise, into 3 slices Dip cut sides of slices in flour, coating completely In hot butter in large skillet, sauté slices until nicely browned on undersideSprinkle each with 1/2 tsp brown sugar Turn slices, sprinkle with some of salt, pepper, and a little more brown sugarWhen other side is nicely browned, turn slices again Pour cream into skillet, cook, over medium heat, uncovered 5 minutes, or until tomato slices are tenderMakes 6 servings | |
