| Baked Sweet Potatoes in Orange Cups 5 thin skinned oranges, cut in half3 lbs sweet potatoes, pared and cut into large chunks 1 cup sugar10 tbsp (1 stick plus 2 tbsps) unsalted butter, softenedsalt, to tasteFreshly ground black pepper, to taste2 oz (about 1/4 cup) peeled fresh ginger root, grated With a grapefruit knife or small spoon, remove the fruit from the oranges over a sieve placed over a bowl.Reserve the juice, Squeeze the remaining juice from the fruit into the bowlMeasure out 1/2 cup of fresh orange juiceReserve the remaining juice for other uses In a large, covered saucepan of boiling water, cook the sweet potatoes about 20 to 30 minutes, or until they are tender when pierced with the point of a sharp knifeDrainReturn the sweet potatoes to the panHeat over medium heat and shake the pan about 1 minutes, until the excess water has evaporatedWith a potato masher or a hand held electric mixer, mash the potatoesAdd the orange juice, sugar, butter, salt, and pepper and beat until combined Mound the sweet potato mixture into the orange shells, sprinkle the tops evenly with the grated ginger, and dot with the remaining 2 tbsp, of butter.The filled orange cups can be made ahead, covered and refrigerated for up to 8 hours Preheat the oven to 350Bake for 30 minutes, or until heated throughServe hot. | |
