Ham-Banana Casserole




1/4 cup melted butter or margarine

2 tbsp all purpose flour

1/2 tsp salt

1 cup milk

1/2 cup grated cheddar cheese

6 slices boiled ham

1 tsp prepared mustard

6 medium banana's green tipped



Preheat oven to 350F

Grease a 12x8x2 inch baking dish



In medium saucepan, blend 2 tbsp butter, flour, and salt



Gradually blend in milk, cook, stirring over low heat, until thickened and smooth



Add cheese, and stir until melted and blended

Remove from heat



Spread ham slices with mustard

Peel bananas, and roll each in a ham slice



Place banana rolls, seam side down, in prepared baking dish



Brush banana tips with remaining 2 tbsp butter

Top with cheese sauce



Bake 15 to 20 minutes

Makes 6 servings

Pineapple Mustard Glazed Ham




2 (20oz) cans pineapple slices packed in juice

1 cup packed dark brown sugar

1/3 cup Dijon mustard

1/4 cup whole grain mustard

1 spiral-sliced, bone in half ham (7 to 10 lbs) preferably shank end



Drain pineapple, reserving 3/4 cup juice

Whisk juice, brown sugar, and mustards in bowl



Remove ham from packaging and discard plastic disk that covers bone

Line 13x9 inch baking dish with two 24 inch long pieces of foil



Place ham cut side down in lined baking dish and brush liberally with glaze



Using toothpicks, attach pineapple rings all over top and sides of ham (do not press toothpicks all the way into ham)

Brush with more glaze and wrap tightly in foil

Let stand at room temperature for 1-1/2 hours



Adjust oven rack to lowest position and heat oven to 300 degrees



Bake ham until center registers about 100 degrees on instant read thermometer, 2 to 3 hours, depending on weight of ham (17 minutes per pound)



Remove ham from oven and roll back foil to expose ham

Increase oven temperature to 450 degrees



Brush ham liberally with more glaze and return to oven until glaze becomes golden brown and sticky, 30 to 40 minutes

Remove from oven, brush entire ham again with glaze, loosely cover with foil, and let rest for 30 to 40 minutes before carving, basting ham with juices once or twice,

Tangy Glazed Ham




1 boneless fully cooked ham (3lb)

1/2 cup sweet and sour sauce

1/4 cup light corn syrup

3 tb zesty Italian salad dressing



Place ham in an 11x7x2 baking pan

Pour remaining ingredients over ham in the order listed

Bake, uncovered, at 325 basting occasionally, for 1-1/4 to 1-1/2 hours or until a meat thermometer reads 140

Yield 12 servings

Fire and Spice Ham




1 (5-1/2 to 6 pound) 33% less sodium smoked fully cooked ham half

Vegetable cooking spray

1/2 cup red pepper jelly

1/2 cup pineapple preserves

1/4 cup packed brown sugar

1/4 tsp ground cloves



Trim fat and rind from ham half

Score outside of ham in a diamond pattern.

Place ham on rack coating with cooking spray.

Place rack in broiler pan



Combine jelly and remaining ingredients, stirring with a whisk until well blended

Brush about 1/3 of jelly mixture over ham



Bake at 425 for 5 minutes.

Reduce oven temperature to 325 (Do not remove ham from oven)

Bake 45 more minutes, basting ham with jelly mixture every 15 minutes.

Transfer ham to a serving platter, let stand 15 minutes before slicing

Spiced Honey & Black Pepper Glazed Ham


1 (8-10 lb) fully cooked bone in ham

2 tbsp cracked black pepper

2 tbsp ground mustard seed

2 tbsp garlic powder

1/2 cup honey

1-1/2 tsp ground Saigon cinnamon

1/2 tsp ground cloves



Preheat oven to 323F



Score ham at 1 inch intervals with a sharp knife, place in baking dish

If ham appears dry, moisten surface with water.

Combine black pepper, mustard and garlic powder in a small bowl.

Rub pepper mixture over surface of ham

Roast according to manufacture's directions



Combine honey, cinnamon and cloves.

Drizzle over ham during the last 30 minutes of roasting

Remove ham from oven and let rest 20 minutes before slicing.

Berry Glazed Ham




1 smoked precooked whole ham, about 10 to 12 pounds

Whole cloves

2 cups sugar

4 teaspoons dry mustard

1 cup water

4 cups (1 pound) fresh or frozen-fresh cranberries, rinsed and drained

1 cup fruit juice



Score ham fat into diamonds

Press a whole clove into each diamond

Place ham into a shallow roasting pan and roast at 350 for 1 hour.

In a saucepan combine sugar, mustard and water, stir until smooth, and add remaining ingredients cook at a boil until cranberries are tender, about 10 minutes

Remove ham from oven and spread with part of glaze

Return to oven for 30 minutes

Remove from oven and place on platter

Spoon some warmed glaze over ham

Cut ham into slices to serve with some of the glaze spooned over each serving

Schnitz And Knepp
(Pennsylvania Dutch)




1 pkg (8oz) dried apple rings

4 to 5 lb fully cooked ham shank

Brown Gravy, below

Parsley Dumplings, below

Chopped parsley

In medium saucepan, add cold water to cover apple rings, let stand at least 2 hours, (Some of the water will be absorbed)

Again add cold water to cover apples, bring to boiling

Reduce heat, and simmer, uncovered 20 minutes

Drain apples, reserving both cooking liquid and apples

Meanwhile, in an 8 quart kettle, add water to cover ham shank, bring to boiling

Reduce heat, and simmer, uncovered, 45 minutes, or until fork tender

Remove ham, reserving liquid

Let cool slightly, skim the fat from surface of the liquid

With knife, remove rind from ham, and discard

Trim fat, cut ham into serving size pieces

Place ham in 4 quart Dutch oven

Top with apple rings

To reserved apple liquid, add enough ham liquid to measure 6 cups

Add to ham, reserve rest of liquid to make Brown Gravy

Bring ham and apples to boiling

Reduce heat, simmer, covered, about 10 minutes



Meanwhile, make Brown Gravy

Stir into ham and apples, simmer 15 minutes



Also, make Parsley Dumplings

Drop batter, by heaping tablespoonfuls, onto simmering mixture

Cook, tightly covered 20 minutes, or until they are light



Serve ham and apples with dumplings in bowls, sprinkled with parsley

Makes 6 servings

Brown Gravy for Ham



1/4 cup unsifted all purpose flour

1/4 cup dark brown sugar, firmly packed

1-1/2 cups cooking liquid from ham



In medium saucepan, over low heat brown flour, stirring constantly, until deep golden

Remove from heat

Stir in sugar

Gradually add ham liquid, stirring to make a smooth mixture

Bring to boiling, stirring constantly

Then stir into ham and apples

Makes about 1 cup
