Rabbit With A Bite

3 oz sour cream

1 tbsp butter

8 oz good-quality Jack cheese, chopped

1 canned chipotle pepper, with adobe sauce

4 thick slices country white bread, toasted

Place sour cream and chipotle in food processor and puree until smooth.

Put cheese, butter, chipotle mixture in skillet

Stir over medium heat until cheese is thoroughly melted

Remove skillet from heat for 1 to 2 minutes until cheese mixture firms up slightly

Pour cheese mixture onto slices of toast, broil until tops start to bubble, about 1 minute

Serve hot
