Baked Onion Casserole




Boiling Water

1/2 tsp salt

1 lb small white onions, peeled

1 pkg (10 oz) frozen peas

3 tbsp chopped pimiento

1 can (10-1/2 oz) condensed cream of mushroom soup, undiluted

1/2 cup grated sharp cheddar cheese

1/2 cup soft white bread crumbs



Lightly grease a 1-1/2 quart casserole

In medium saucepan, in 1 inch boiling salted water, cook onions, covered 25 minutes or until just tender

Drain onions, reserving liquid

Place onions in casserole



Meanwhile, preheat oven to 350F



Pour boiling water over peas to thaw them, drain well

Sprinkle peas over onions in casserole



Combine mushroom soup with 1/4 cup reserved onion liquid, mix well

Add 2 tbsp pimiento, toss with vegetables in casserole



Sprinkle top with cheese, rest of pimiento, and bread crumbs



Bake uncovered, until hot and bubbly, about 25 minutes



Makes 6 servings
