Lobster Casserole




1 pkg cheese and garlic croutons, crushed

7 saltines, crushed

7 Ritz crackers crushed

1 stick butter, melted

1 sticks margarine, melted

1 lb lobster meat



Place lobster on bottom of pan, pour some butter and pour some margarine over

Put cracker mixture on top and cover with remaining butter and margarine

Bake covered at 350 for 30 minutes.

Lobster Newburg




3/4lb cooked lobster meat, or 2 cans (6oz size) lobster meat

2 egg yolks, slightly beaten

1/2 cup heavy cream

1/4 cup butter or margarine

2 tbsp sherry

1/2 tsp salt

Dash cayenne

Dash nutmeg



If necessary, cut the lobster meat into chunks

Combine egg yolks with cream

Melt butter in medium saucepan, over low heat

Stir in egg mixture and sherry, cook, stirring constantly, until mixture thickens

Remove from heat

Add salt, cayenne, nutmeg and lobster, reheat gently

Serve hot, over buttered toast slices, if desired

Makes 3 or 4 servings
