Apricot Marshmallow Ice Cream




Drain one can apricots,

Put through a food processor

Combine with the juice of one lemon,

Add a dash of salt

And 1/2 cup of sugar

Cook 5 minutes

Drop in 10 marshmallows, cut in pieces,

When cool

Fold in 1 cup cream whipped

Place in mold and pack in ice and salt.

Banana Ice Cream




1 quart cream

4 ripe bananas

1 cup sugar

Few grains of salt

1-1/2 tablespoon lemon juice



Remove skins of the bananas and force through a sieve with lemon juice

Partly freeze the remaining ingredients and add banana-lemon pulp.

Banana Ice


Juice of 3 oranges

Juice of 3 lemons

3 bananas, mashed

2 cups of sugar

3 cups of water



Dissolve the sugar in water

Mix fruit juices, and last, mash bananas and mix ingredients together

Put in freezer and turn freezer until the ice is hard

Let stand until ready to serve

Serves 8

3 tbsp lemon juice

3/4 cup whipping cream

1/2 cup sugar



Combine banana pulp, sugar, salt, and lemon juice

Pour into trays, Mix thoroughly

Cook over hot water, stirring, until thick and smooth, to trays

Continue freezing until firm.

Caramel Ice Cream


Use the below recipe.

Caramelize half of the sugar

Add water slowly to it, and cook until dissolved

Decrease vanilla to 1 teaspoon

1/2 cup sugar

Pinch Salt

1 cup water

2 tsp vanilla



Sweet cream butter is preferred because of the superior color and flavor

Scald 1 cup milk over boiling water

Add butter, sugar and salt, and stir until butter is melted and sugar dissolved

Add remaining 1 cup milk

Water and vanilla

Cool

Freeze with 1:8 salt-ice mixture

Yield 1 quart

Coffee Ice Cream




Bring the 1 cup water to boil with 1/4 cup coffee

Strain through double cheese cloth

Make up to 1 cup water

Proceed as for vanilla ice, substituting the coffee for the 1 cup water, and omitting the vanilla

Cranberry Ice




4 cups cranberries

2-1/2 cups water

2 cups sugar

Juice 2 lemons

1 tsp gelatin dissolved in 1/2 cup cold water



Cook cranberries with water until berries stop popping

Strain, add sugar

And cook until dissolved

Add gelatin, cool, stir in strained lemon juice

Pour into tray of freezer stirring occasionally

Allow 2 to 3 hours

Makes 6 portions

Easy Homemade Chocolate Ice Cream



1 (14oz) can Sweetened Condensed Milk (Not evaporated)

2/3 cup chocolate flavored syrup

2 cups (1 pint) Borden Whipping Cream, whipped



In large bowl, stir together sweetened condensed milk and syrup

Fold in whipped cream

Pour into aluminum foil lined 9x5 inch loaf pan

Cover

Freeze 6 hours or until firm

Scoop ice cream from pan or remove from pan

Peel off foil and slice

Return leftovers to freezer



Peppermint candy

Omit chocolate syrup

In large bowl, combine sweetened condensed milk, 2 tbsp water, 2 beaten egg yolks and 4 tsp vanilla extract

Fold in whipped cream and ¼ cup crushed hard peppermint candy

French Vanilla

Omit chocolate syrup

In large bowl, combine sweetened condensed milk 2 tbsp water, 2 beaten egg yolks and 4 tsp vanilla extract

Fold in whipped cream

English Toffee Ice Cream




1-1/4 cups top milk

2 eggs

1/2 cup sugar

1 tbsp flour

1/8 tsp salt

1/2 pt whipping cream

2 tsp vanilla

1/2 cup crushed English Toffee



Mix flour in sugar and blend with egg yolks

Heat milk to scalding point and add to egg mixture

Cook in a double boiler to a soft custard, at least 15 minutes to avoid raw or starchy taste

Add salt and crushed toffee

Cool and pour into inset pans of refrigerator

Freeze to a mush

Fold in beaten egg whites, whipped cream and flavoring

Return to trays and finish freezing

Stirring once or twice during the freezing process improves texture of this ice cream.

Fresh Fruit Ice Cream


1 (14oz) can sweetened condensed milk

1 cup pureed or mashed fresh fruit (peaches, strawberries, bananas, raspberries, etc)

1 tbsp vanilla extract

Food coloring optional



In a large bowl combine condensed milk and vanilla

Stir in 1 cup pureed or mashed fruit and food coloring

Fold in 2 cups (1pint) whipping cream, whipped (do not use non-dairy whipped topping)

Pour into 9x5 loaf pan or other 2 quart container, cover

Freeze 6 hours or until firm

Freeze leftovers

German Chocolate Ice Cream




1-1/2 cups sugar

1/4 cup all purpose flour

1/4 tsp ground cinnamon

1/4 tsp salt

4 cups milk

3 eggs, beaten

1 quart half and half cream

2 pkg (4oz each) German sweet chocolate, melted

1 cup flaked coconut

1 cup chopped pecans



In a large heavy saucepan, combine the sugar, flour, cinnamon and salt

Gradually add milk and eggs, stir until smooth

Cook and stir over medium-low heat until mixture is thick enough to coat a metal spoon and reaches 160 about 15 minutes

Stir in the remaining ingredients

Refrigerate for several hours on overnight

Fill ice cream freezer cylinder 2/3 full

Freeze according to manufacturers instructions

Refrigerate remaining mixture until ready to freeze

Remove ice cream from the freezer 10 minutes before serving

Yield 1 gallon

Homemade Ice Cream in a Bag

Forget endlessly cranking the handle of an ice-cream maker. After combining
the ingredients, each guest can simply shake up his or her own pouch of soft
serve--and it's done in just 5 minutes.
INGREDIENTS:
2 tablespoons sugar
1 cup half and half
1/2 teaspoon vanilla extract
1/2 cup salt (The bigger the granules, the better. Kosher or rock salt works
best, but table salt is fine.)
Ice cubes (enough to fill each gallon-size bag about half full)
1 pint-size zip lock bag
1 gallon-size zip lock bag

1. Combine the sugar, half and half, and vanilla extract in the pint-size
bag and seal it tightly.

2. Place the salt and ice in the gallon-size bag, then place the sealed
smaller bag inside as well. Seal the larger bag. Now shake the bags until
the mixture hardens (about 5 minutes). Feel the small bag to determine when
it's done.

3. Take the smaller bag out of the larger one, add mix-ins, and eat the ice
cream right out of the bag. Easy cleanup too! Serves 1.

Honey Ice Cream




1/3 cup pure strained honey

2 eggs

1 cup evaporated milk

Pinch salt



Heat honey

Pour over slightly beaten egg yolks, beating rapidly

Cook mixture over boiling water until it coats a spoon

Cool

Chill milk thoroughly, and then whip until stiff

Then fold in the honey egg yolk mixture, mixing lightly but thoroughly

Fold in the stiffly beaten egg whites

Turn into freezing tray and place in refrigerator immediately

Yield 6 servings

Ice Cream My Mother’s Recipe

She got from Olive Kolinkie



6 eggs separated

1 cup sweet cream whipped

1 cup sugar white or brown

1 ½ cups sweet milk flavoring



Beat egg whites, let stand, add sugar and yolks and some of the milk, beat good, add rest of milk, cream, and whites

Add all together put out doors stir 2 to 3 times

Heavenly Lime Ice Cream




1/2 cup granulated sugar

1/4 cup water

1 cup milk

1-1/3 cups whipping cream

1 tsp vanilla

Dash salt

Grated peel of 1 lime

Freshly squeezed juice of 2 limes

Green food coloring, optional



Thinly sliced lime peel, for garnish



In a saucepan, blend sugar and water

Bring to a boil

Cook for a few minutes, until sugar is completely dissolved

Let cool



In a bowl, combine milk, whipping cream, vanilla, salt and the chilled syrup

Add grated lime peel, juice, and food coloring, if used

Stir well to combine



Place mixture in an ice cream maker

Freeze according to instructions, about 30 minutes

Remove ice cream and place in a loaf pan



Cover with foil and freeze ice cream for about 3 hours



To serve, scoop ice cream onto serving dishes

Garnish with lime peel

Serve

1 cup canned pumpkin

1/4 tsp pumpkin pie spice



Softened ice cream

Stir in pumpkin and pumpkin pie spice, freeze
