| White Onion Soup 1-1/4 lbs white onions3 tbsp unsalted butter or margarine3oz white wine4 cups water1/4 tsp dried oregano1/4 tsp dried thyme1 egg yolk3 tbsp whipping cream1 tbsp all purpose flourSalt and pepper, to taste2 tbsp chopped parsleyCroutons, for serving, optionalParmesan cheese, for serving Peel onionsSlice thinly In a large saucepan over low heat, melt butterAdd onions and sautéStirring occasionally, for 20 to 25 minutes until they are soft Add wineCook, stirring gently, until liquid has almost evaporated Add waterBring to a boilAdd oregano and thymeSimmer over low heat, uncovered, for about 45 minutes In a bowl, whisk together the egg yolk, cream and flourAdd 1 cup of the onion mixture, whisking forcefullyStir combined onion and cream mixture into the simmering soupCook until heated through, about 2 minutes Add salt and pepper to tasteStir in parsley Ladle soup into heated bowlsSprinkle with croutons, if used, and top generously with Parmesan cheese Broil briefly, if desired | |
