1 can (1 lb) julienne beets

1/3 cup finely chopped onions

1 can (10-1/2oz) condensed beef bouillon, undiluted

1 tsp salt

2 tbsp sugar

1/4 cup lemon juice

2 eggs

1/2 cup dairy sour cream

Fresh dill (optional)

In medium saucepan, combine beets and liquid, onion, bouillon, salt, sugar, and lemon juice with 2 cups water

Over medium heat, bring mixture to boiling covered

Reduce heat, simmer 5 minutes

In small bowl whisk together eggs and gradually pour 1/2 cup hot beet liquid over eggs, continuing to whisk

Return to beet mixture to saucepan

Stir quickly, to combine smoothly

Serve at once in warm bowls (do not reheat, mixture might curdle)

Top each serving with a heaping tbsp sour cream

Sprinkle with snipped fresh dill, if desired

Makes 6 servings

Note Borsch may also be served chilled
