Carrot Muffins




1/4 cup shortening

1/4 cup sugar

1 egg

3 tsp baking powder

2 cups flour

1 cup milk

1/2 tsp salt

1 cup sieved cooked carrots



Cream shortening and sugar

Add beaten egg

Add sifted dry ingredients alternately with milk and lastly fold in the sieved cooked carrotsBake in greased muffin tins in 400F oven for 25 minutes

Carrot Cake

Sift together
2 cups sifted flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¼ tsp salt

Combine
1-1/2 cups salad oil
2 cups sugar
Add 4 eggs, one at a time beating well after each
Add dry ingredients to oil, egg and sugar mixture
Stir in 2 cups finely grated carrots (measure them lightly do not press in cup
Bake in 350 oven for 50 to 60 min

Frosting
1 cup brown sugar
1-1/2 tbsp dark syrup
1 egg white
3 tbsp cold water
¼ tsp cream of tartar
1 tsp vanilla
Cook for about 7 min. (using beater like 7 min. frosting, on top of boiling water)
Add vanilla last

Frosted Carrot Bars

4 eggs
2 c sugar
1-1/2 c salad oil
2 c sifted flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
3 c finely grated carrots (9 medium)
1-1/2 c flaked coconut
1-1/2 c chopped walnuts

Beat eggs until light
Gradually beat in sugar
Alternately add salad oil and flour sifted with soda, cinnamon and salt
Mix well
Fold in carrots, coconuts and walnuts
Spread evenly in 2 greased 13x9x2 pans
Bake in moderate oven 350F 25 to 30 minutes
Set pans on racks and cool
Spread with Cream Cheese Frosting if desired

Carrot Stuffed Squash




4 large crookneck squash

4 large carrots, peeled and cut into 1 inch pieces

2 tbsp butter, divided

1 cup chopped onion

1 tsp honey

1/2 tsp cinnamon

Salt to taste

Freshly grated Parmesan cheese



Preheat broiler



Cook squash in large saucepan of boiling water until tender, about 8 minutes

Using slotted spoon, remove and drain

Halve lengthwise and scoop seeds from centers

Place halves on broiler pan

Set aside

Cook carrots in same saucepan of boiling water until soft, about 15 minutes

Meanwhile, melt 1 tbsp butter in medium skillet over medium heat

Add onion and stir until golden and beginning to brown, about 10 minutes

Set aside

Drain carrots

Transfer to food processor or blender

Add onion, remaining butter, honey, cinnamon and salt

Puree

Mound mixture in squash

Top with Parmesan cheese

Broil until golden, about 5 minutes

Serves 8

Carrot Souffle




1lb fresh carrots

3 tbsp butter or margarine

1/2 cup finely chopped yellow onions

2 tbsp all purpose flour

3/4 cup milk

2 tsp granulated sugar

1/2 tsp salt

Dash black pepper

1/2 tsp dried thyme

1/2 tsp Worcestershire sauce

3 eggs, separated

2 tsp lemon juice

1/4 tsp cream of tartar



Cut off tops of carrots

Peel and cut into 1 inch rounds

Cook in boiling water 15 minutes, until tender

Drain

Place in food processor

Puree



Meanwhile, melt butter in a 2 quart saucepan

Add onions and cook until translucent, stirring often



Blend in flour

Gradually add milk, stirring constantly, until thickened

Add sugar, salt, pepper, thyme and Worcestershire sauce

Remove from heat



Beat egg yolks with a fork

Add a little of the sauce to egg yolks

Blend well and add to remaining sauce along with pureed carrots and lemon juice



Beat egg whites until frothy

Add cream of tartar and beat until stiff but not dry

Fold into carrot mixture



Turn into lightly greased 1-1/2 quart soufflé dish or casserole

Bake at 350 for 45 minutes or until center is firm to the touch

Carrot Plum Pudding




1 cup grated raw potato

1 cup grated raw carrot

1 cup suet chopped fine

1 cup sugar

1-1/2 cups flour

1 cup seedless raisins

1/2 cup currants

1/4 cup citron, cut fine

2 eggs

1 teaspoon soda

1/2 teaspoon salt

1 teaspoon cinnamon (ground )

1/2 teaspoon nutmeg



Mix soda with potato and carrot, add sugar, suet, and eggs slightly beaten

Sift spices with flour and add to mixture

Lastly add fruit slightly floured.

Steam 3 hours

English Steamed Carrot Pudding




3 cups raw carrots, grated

2 cups chopped suet

1-1/3 cups stale bread crumbs

1-1/3 cups cleaned currants

2/3 cup raisins

3/4 cup sugar

1/2 tsp nutmeg

Grated rind of 1 lemon

1 egg

2/3 cup flour

3/4 tsp salt



Combine dry ingredients and add fruit and suet

Rub together well with the hands

Then stir in carrots and the egg

Transfer to a well oiled pudding mold and steam for 4 hours

Serve with any fruit sauce

Velvety Carrot Soup




6 medium carrots peeled and diced

1 small onion, chopped

3 cups chicken broth or water

1 cup milk

1/8 tsp allspice

1/8 tsp nutmeg

Salt to taste



1/4 cup light sour cream, for garnish, optional

Freshly ground allspice or grated nutmeg and a dash of thyme



Cook carrots and onion in broth or water until tender, 15 to 20 minutes



Turn into blender, puree until smooth, and add milk, allspice, nutmeg and salt

Return to saucepan

Keep hot



To serve, pour into heated soup bowl

If using sour cream, soon or drizzle decoratively over the soup

Offer allspice in a grinder over individual servings or serve with grated nutmeg and thyme

Carrot Drop Cookies




1 cup shortening

3/4 cup sugar

1 egg

1 cup mashed, cooked carrots

2 cups pastry flour

2 tsp baking powder

1/2 tsp salt

1/2 tsp vanilla

Few drops of almond extract



Cream sugar and shortening

Add beaten egg and mashed carrots

Sift together dry ingredients and add to first mixture

With flavoring

Drop on greased cookie sheets, 3 inches a part

Bake until golden brown in moderate oven 350F

Soft-Healthy Vegetable & Fruit Cookies


1 c margarine

2 c sugar

3 eggs

1 c cup-up carrots, ground

1 large apple, ground

1 large orange, ground

1 c dates, ground

1 c raisins, ground

4-1/2 c sifted flour

1/2 tsp salt

1 tsp baking soda

1/4 tsp ground allspice

1/4 tsp ground cloves

1/2 tsp ground nutmeg

1 tsp ground cinnamon

1 c chopped walnuts



Beat margarine until light, gradually add sugar and beat until light and fluffy

Beat in eggs until well blended

Fold in carrots and fruits

Sift together flour, salt, baking soda and spices

Add to first mixture

Fold in nuts

Drop by teaspoonfuls on greased baking sheet

Bake in moderate oven 350F, 10 to 12 minutes

Makes about 7-1/2 dozen

Cheesy Turnips and Carrots




3 cups diced peeled turnips

2 cups sliced carrots

1/4 tsp ground ginger

3/4 cup water

1 tsp salt, divided

1/2 cup chopped onion

1/2 cup diced celery

3 tbsp butter

3 tbsp all purpose flour

1/4 tsp pepper

1-1/2 cups milk

1 cup (4oz) shredded cheddar cheese



In a saucepan, combine turnips, carrots, ginger, water and 1/2 tsp salt

Cover and cook over medium high heat for 10 to 15 minutes or until vegetables are tender, drain and reserve liquid

Set vegetables aside



In a skillet, sauté onion and celery in butter until tender, stir in flour, pepper and remaining salt

Add milk and the vegetable liquid, bring to a boil

Cook and stir until thickened and bubbly

Stir in cheese until melted, stir in the vegetables and heat through

Yield 4 to 6 servings

Carrot Soufflé




1 pound carrots, peeled and chopped

3 large eggs, lightly beaten

1/2 cup sugar

1/2 butter or margarine, melted

3 tbp all purpose flour

1 tsp baking powder

1 tsp vanilla extract



Bring carrots and water to cover to a boil in a medium saucepan, cook 45 minutes or until very tender. Drain



Process carrots in a food processor until smooth



Stir together carrot puree, eggs, and remaining ingredients

Spoon into a lightly greased 1 quart baking dish



Bake at 350 for 45 minutes or until set.

Gingered Lime Carrots




1 lb carrots cut into 1/2 inch slices

1 tbsp water

1 tbsp lime juice

1 tbsp butter

1 tbsp honey

1 tsp grated lime peel

1 tsp grated fresh gingerroot

Lime slices



In a 1-1/2 quart microwave-safe bowl, combine carrots and water

Cover and cook on high for 7 to 8 minutes or until crisp-tender

Stirring once

Let stand 5 minutes



Meanwhile, in a small bowl, combine lime juice, butter, honey, peel and ginger

Cover and microwave on high for 1 minute

Drain carrots, stir in the lime mixture

Cover and cook on high for 1 minutes

Garnish with lime

Yield 4 servings

Savory Carrots


Scrape and cut lengthwise 8 carrots

Pour enough hot water over them to cover

Add 1/2 teaspoon salt,

3 tomatoes, skinned and cut up

2 medium onions cut fine

And boil about 1/2 hour, watching carefully to let water boil down till almost dry, then add a tablespoon of butter and pepper to taste

Carrot & Red Cabbage Salad



1 cup sour cream

2 tsp olive oil

1 tsp lemon juice

1/2 tsp salt

2 cups finely shredded red cabbage

4 medium carrots, scraped and shredded

1/2 cup minced green olives

2 tbsp minced green onions



Blend sour cream, olive oil, lemon juice and salt.

Combine cabbage, carrots, olives and onion.

Pour sour cream mixture over vegetables and toss lightly.

Chill

Serves 6 to 8
