Cherry Pineapple Cheese Mold




1 can (8-1/2 ounces) crushed pineapple

2 packages (3 ounces each) lemon flavor gelatin

2 cups boiling water

1-1/3 cups pineapple syrup and water

1/2 cup dairy sour cream

1 cup cottage cheese

1/4 cup quartered maraschino cherries



Drain pineapple reserving syrup; add water to syrup to make 1 1/3 cups.

In a large bowl pour boiling water over gelatin;

Stir until dissolved.

Add pineapple liquid;

Chill until partially set.

Fold in sour cream, cottage cheese, pineapple and cherries.

Pour into ring mold.

Chill until firm.

Makes 8 to 10 servings.

Valentine Salad Mold


8-cup Heart Mold



Topping for Valentine Salad Mold (1st step)



1/2 lb cream cheese, at room temperature

About 2 tbsp prepared horse-radish

1 tbsp plain gelatin combined with

1/4 cup water, allowed to stand until thick, and dissolved over simmering water

About 1/2 tsp garlic or onion salt

1 tsp salt

1 cup sour cream or buttermilk (it must be cold or it will not unite well)

Beat cream cheese

Add horse-radish and all other ingredients in the order given, a little at a time, beating after each addition

Pour this preparation into a lightly oiled heart mold and refrigerate until firm to the touch

Then pour salad over top and spread gently and smoothly

Refrigerate mold at least 8 hours



Filling for Valentine Salad Mold (2nd Step)



4 cups salmon, tuna, or any other seafood, or cooked chicken cut into 1 inch piece

2 cups celery cut about 1/8 inch wide crosswise

1/3 cup fresh green onion cut fine (or 2 tbsp chopped)

1/3 cup fresh green onion stems cut about 1/2 inch long

1/4 cup or less pimento well drained and cut into 1/2 inch squares

1/2 tsp hot sauce or 1/8 tsp hot pepper

1-1/2 cup mayonnaise

4 tsp plain gelatin combined with

1/2 cup cold water, stirred gently and allowed to stand until thick, then dissolved over simmering water and , while still warm, added slowly to mayonnaise



Combine all ingredients in the order given, adding mayonnaise and gelatin last

Mix with a spoon until well blended, and pour over topping that is firm to touch spreading gently and smoothly

Refrigerate mold at least 8 hours



To serve dip mold into warm water a few seconds wipe it well on out side

Place a small cardboard cut about same size in shape of heart covered in foil of wax paper

Place on a platter garnish with decorations below



Decorations for Valentine Salad Mold



3-1/2 cups water (half boiling, half cold)

3 packages raspberry (or strawberry) gelatin dessert

1 tbsp plain gelatin combined with

1/2 cup cold water and stirred gently until thick

1/4 cup lemon juice (optional)



Pour boiling water over red gelatin and at once add plain gelatin combined with cold water

Stir until completely dissolve

Then add lemon juice

Pour into 3, 9 inch round or square pans that have been lightly oiled refrigerate at least 8 hours



Cut with small daisy cutter lift them out and place on cookie sheet

With knife cut through rest of gelatin to simulated chipped ice

Form a spray of daises on top of mold

First piping bulb of green cream cheese underneath each to raise them

Then pipe some stems

With a large spoon pick up chipped gelatin ice and arrange it thickly around base of mold

Then place leftover daisy flowers on top of ice

Close to the mold

Serve Horse Radish Sauce with this Mold
