| Yam Triple Deckers
2 cups ground cooked ham
1/4 cup breadcrumbs
3 tablespoons pineapple juice
Dash of ground cloves
4 slices canned pineapple
2 cups mashed cooked yams
1/2 teaspoon salt
1 egg yolk
3/4 cup fine dry breadcrumbs
1 tablespoon pineapple juice
Combine ham 1/4 cup breadcrumbs, 3 tablespoons pineapple juice,
And cloves
Mix well.
Shape into 4 patties.
Place patties in greased shallow baking pan
Top each patty with a pineapple slice
Combine mashed yams, salt, egg yolk, 3.4 cup fine dry breadcrumbs,
And 1 tablespoon pineapple juice
Mix well
Shape into 4 patties and place 1 yam patty on top of each pineapple slice.
Bake in moderate over 350 degrees for 30 minutes
Serve piping hot
