Lollypops
Master Recipe
2 cups sugar
2/3 cup light corn syrup
1 cup water
1/2 tsp oil of lemon
Few drops yellow food coloring

Place sugar, corn syrup, and water in saucepan. Cook over low heat, stirring until sugar dissolves,
Continue cooking, without stirring. To Hard Crack stage (310F)

Wrap wet cloth around a fork. While cooking, wipe crystals from sides of pan with wet cloth
Grease lollypop molds or flat surface.
When temperature of 310F. Is reached, add oil of lemon and coloring, stirring both in quickly
Pour immediately into greased molds, or drop from end of spoon onto flat greased surface.
Press end of stick into each pop as soon as each is dropped from spoon
Loosen lollypops as soon as they are firm and before they are cold.

Lollypop Variations
Vary flavoring and coloring by using oil of lime and green food coloring, Oil of Peppermint and Pink food coloring. And oil of cinnamon and red food coloring
To form faces, use Life Savers or raisins for eyes, pieces of prune for mouth, and coconut for hair. Have all decorations ready to add while lollypops are hot.
