Chocolate Log Cabin Rolls


1 c light brown sugar, packed
3/4 c granulated sugar
1/2 c maple syrup
1 c light cream
2 tbsp butter
few grains salt
1-1/2 sq Hershey’s baking chocolate
1 egg white
1 c broken pecans

Combine sugars, maple syrup, cream, butter, salt and the baking chocolate, broken into small pieces, in a heavy saucepan (3qt)
Bring gently to boiling point, stirring constantly
Cover and cook 5 minutes
Remove cover and cook stirring occasionally, until mixture forms soft ball in cold water 236F
Cool until bottom of pan feels lukewarm 110F
Beat vigorously until fudge begins to lose its gloss and holds its shape
Turn out onto a buttered surface
Knead fudge till it can be shaped, keeping hands well buttered
Shape into two 9 inch rolls
Brush with slightly beaten egg white
Roll immediately in broken pecans, pressing nuts into roll to coat
Wrap and chill until ready to slice
