1-2-3 Hash Brown Pie
2 cups frozen has brown potatoes, thawed
1 cup shredded low-moisture part-skim mozzarella cheese, divided
1 can (8oz) mushrooms, drained
2 cups frozen broccoli florets
4 eggs
1/4 cup milk
1/2 tsp each dried thyme leaves and onion powder
1/4 tsp pepper
Preheat to 375F lightly press hash brown potatoes into greased 9-inch pie plate to form crust
Sprinkle with 1/2 cup of the cheese, top with mushrooms and broccoli
Beat eggs, milk, thyme, onion powder and pepper with wire whisk until well blended
Pour over broccoli
Sprinkle with remaining 1/2 cup cheese
Bake 35 minutes or until center is set and top is golden brown
Makes 4 servings

Potato Patties

4 cups cold mashed potatoes
1/2 cup light cream
12 soda crackers, crushed (about 1/2 cup)
1/4 cup minced onion
1 egg, slightly beaten
1/4 teaspoon celery salt
1/4 teaspoon pepper
1/8 teaspoon garlic salt
Grease a griddle and preheat over medium heat.
In a bow, combine all the ingredients.
Shape mixture into twelve 1/2 inch thick patties
Cook on prepared griddle until brown on bottom and warm on top
Turn and cook 3 to 4 minutes more or until brown
Keep warm in a 300 degree oven while cooking remaining patties
Makes 12

Hash Brown Quiche

3 cups frozen loose-pack shredded hash browns, thawed
1/3 cup butter, melted
1 cup diced fully cooked ham
1 cup (4 oz) shredded cheddar cheese
1/4 cup diced green pepper
2 eggs
1/2 cup milk
1/2 tsp salt
1/4 tsp pepper
Press hash browns between paper towel to remove excess moisture.
Press into the bottom and up the sides of an ungreased 9 inch pie plate
Drizzle with butter
Bake at 425 for 25 minutes
Combine the ham, cheese and green pepper, spoon over the crust
In a small bowl, beat eggs, milk, salt and pepper
Pour over all
Reduce heat to 350 bake for 25 to 30 minutes or until a knife inserted near the center comes out clean
Allow to stand for 10 minutes before cutting
Yield 6 servings

Morning Mix it Up

2 cups frozen hash browns
1 cup chopped fully cooked ham
1/2 cup chopped onion
2 tbsp vegetable oil<
6 eggs
Salt and pepper to taste
1 cup (4oz) shredded cheddar cheese
Minced Chives
In a large skillet sauté potatoes, ham and onion in oil to 10 minutes or until potatoes are tender.
In a small bowl, beat eggs, salt and pepper
Add to the skillet, cook, stirring occasionally, until eggs are set
Remove from the heat and gently stir in cheese
Spoon onto a serving platter, sprinkle with chives
Yield 4 servings
