| Old Fashioned Potato Loaves 1 medium potato WaterHot tap water2 packages Fleischmann's active dry yeast2 tablespoons softened Margarine2 tablespoons sugar1 tablespoons salt1 cup warm milk (105-115)6-1/2 to 7-1/2 cups Bread Flour Pare and dice potatoBoil in water to cover until tender, about 20 minutes. Drain reserving liquidAdd hot tap water to potato liquid to make 1 cup, cool to warm (105-115) Mash potato set aside Pour warm potato water into large warm bowlSprinkle in yeastStir until dissolved Add margarine, sugar and salt.Stir in mashed potato, warm milk and 3 cups bread flour, beat until smoothStir in enough additional flour to make a stiff doughTurn out onto lightly floured boardKnead until smooth and elastic (about 10 minutes)Place in greased bow, turning to grease top.CoverLet rise in warm place, free from draft, until doubled in bulk (about 35 minutes) Punch down dough, turn over in bowlCover and let rise again about 30 minutes. Punch dough down. Turn out onto lightly floured board.Let rest, covered with inverted bowl, for 15 minutesDivide in halfRoll each half to a 14 x 9 inch rectangle,Shape into loavesPlace in 2 greased 9 x 5 x 3 inch loaf pansCover let rise in warm place, free form draft, until doubled in bulk, about 50 minutesDust loaves with flourBake at 375 for 35 to 40 minutes or until done.Remove from pans and cool on wire racks Makes 2 loaves | |
