Herb-Mushroom Muffins




4 tbsp butter or margarine

1 cup finely chopped mushrooms

1/2 cup finely chopped onion

1 tsp dried thyme leaves

1-1/2 cups all purpose flour

1/2 cup whole wheat flour

1 tbsp baking powder

3/4 tsp salt

1/8 tsp pepper

1 egg, slightly beaten

1 cup milk



Melt butter in small skillet

Add onion and mushrooms

Sauté for 4 to 5 minutes, stirring several times, until tender

Remove from heat

Add thyme leaves



Grease muffin cups or line with paper baking cups



Mix all purpose flour, wheat flour, baking powder, salt and pepper in large bowl

Beat egg and milk together

Pour over dry ingredients

Add mushroom mixture

Mix gently with rubber spatula, just until dry ingredients are moistened



Spoon batter into muffin cups

Bake at 400F for 20 to 25 minutes until lightly browned and pick inserted in center comes out clean.
