Rhode Island Sauce

Rhode Island Sauce

1/2 cup mayonnaise

3 tbsp chili sauce

1/2 cup whipping cream

1/2 tbsp dry sherry or

Cognac or

Port Wine

In a bowl, combine mayonnaise and chili sauce

Beat cream until stiff peaks form

Gently fold into mayonnaise, using long strokes

Season to taste with sherry, port wine or cognac

For a low-fat variation, combine 1/2 cup light sour cream

3 tbsp chili sauce and 1 tbsp mustard
