Oyster Sauce




1 can (7oz) frozen oysters, thawed and drained

2 tbsp butter or margarine

2 tbsp flour

1 cup milk

1/2 tsp salt

1/8 tsp pepper

1-1/2 tbsp lemon juice



Drain oysters, reserving 1/2 cup liquid

Cut oysters into thirds

Melt butter in small saucepan

Remove from heat

Stir in flour until smooth

Gradually stir in liquid from oysters and the milk

Cook, stirring, over medium heat, until mixture begins to boil and is thickened

Stir in salt, pepper, and oysters reheat gently

Just before serving, stir in lemon juice

Serve sauce along with soufflé
