Amandine Sauce




Drop 1/2 cup shelled almonds into boiling water, and simmer several minutes

Drain well, and let cool a few minutes

Now remove skins and slice almonds lengthwise

Sauté in 1/2 cup hot butter over very low heat about 5 minutes, stirring continuously, until golden brown

Season with about 1/2 tsp salt and mix well

Serve hot over fish or vegetables

May be prepared in advance and reheated over very low heat a few seconds
