Sand Cake




This cake has a fine grainy texture



1 cup butter

1 cup sifted sugar

Grated rind of 2 large lemons (1 tbsp)

6 eggs, separated

2 tbsp lemon juice or 2 tbsp brandy or rum

1 cup sifted cornstarch

1-1/2 tsp baking powder

1/2 tsp salt



Preheat oven to moderate 350

Cream butter until very soft and fluffy

Beat in sugar, 2 tbsp at a time, beating well after each addition

Stir in lemon rind



Beat egg yolks until light; add to butter-sugar mixture, blending thoroughly

Beat in lemon juice or brandy



Sift together flour, cornstarch, baking powder, and salt, stir into batter

Beat again with electric mixer 5 minutes, or by hand 15 minutes



Beat egg whites until they stand in stiff peaks, fold into batter

Generously grease and flour a 9 inch angel cake pan

Pour in batter

Bake on center rack of oven 45 minutes, or until cake tester inserted near center comes out clean

Cool 5 minutes

Loosen cake around edge and turn out onto a wire rack to cool

Note this cake is not usually iced. But if an icing is desired, use this one



Lemon Glaze

To 1 cup sifted confectioners sugar add 2 tbsp lemon juice

Stir until smooth

The glaze should be thin and tart
