Skillet Cookies My Mother’s Recipe
2 eggs
1 cup sugar
1-1/2 cup chopped dates
2 tbsp butter
Cook over low heat stirring occasionally
About 10 minutes
Remove heat and add 3 Cup Rice Krisipes
Cool until you can handle mixture in your hands
Shape into balls and roll in coconut.
Swedish Heirloom Cookies
Bake 325 for 15 to 18 minutes
4-1/2 dozen cookies (do not over bake)
1 cup butter
1 tbsp vanilla
1 cup confectioner sugar
½ tsp salt
¼ cup ground almonds
2 cups flour
Cream butter, vanilla, sugar, and salt, add almonds
Blend in flour, shape dough into balls or crescents using a rounded tsp for each
Bake on ungreased sheets
