Lime Mittens


1-1/2 cups butter

3 tablespoons sugar

2/3 cup powdered sugar

Pinch of salt

2 large eggs

1 tablespoon fresh lime juice

3 cups sifted all-purpose flour



Cream butter, sugar, powdered sugar and salt until fluffy. Add eggs

Mix well

Mix in lime juice

Blend in flour

Wrap in plastic

Chill 2 hours or overnight

Make lime curd. Refrigerate

Preheat oven to 350F

Roll dough between 2 pieces of parchment paper to 3/16 thick

Cut into mitten shapes

Bake on parchment lined sheet for 12 to 15 minutes

Remove and cool

Make glaze and royal icing

Outline cookies with glaze in desired color

Flow in glaze

Let set

Use royal icing to pine in details in the desired color

Allow to dry

Assemble the cookies with lime curd in between two cookies

Refrigerate until firm (20 minutes)



Lime Curd

Combine 1 cup sugar

4 large eggs

1/2 cup fresh lime juice

1 tablespoon lime zest in a medium saucepan

Cook over medium low heat, whisking constantly, until the mixture thickens and holds the mark of a whisk (20 minutes)

Remove from heat, whisk in 1/2 cup butter, cut in small pieces

1 piece at a time, until well combined

Strain through a sieve into a glass bowl

Lay plastic wrap directly on the surface

Chill 3 hours



Glaze

Mix 1 cup powdered sugar

1 tbsp light corn syrup and 2 tbsp water in a small bowl

Tint blue, green and sky blue



Royal Icing

Mix 4 cups sifted powdered sugar

3 tablespoons meringue powder and 6 tablespoons water

Beat on low for 7-10 minutes until peaks form

Leave some white, and tint the rest blue, green and sky blue.
