| Italian Sprinkle Cookies 6 eggs5 cups all purpose flour2 cups confectioners’ sugar2 tbsp plus 1-1/2 tsps baking powder1 cup vegetable oil1 tbsp almond extract1-1/2 tsp lemon extract Glaze1/2 cup warm milk1 tsp almond extract1 tsp vanilla extract3-3/4 cups confectioner’s sugarColored Sprinkles (jimmies) In a mixing bowl, beat eggs until light and foamy, about 5 minutesSet asideIn another mixing bowl, stir together flour, sugar and baking powder, gradually add oil and extractsGradually add eggs (dough will be stiff)Roll dough into 1 inch ballsPlace on ungreased baking sheets Bake at 350 for 12 minutes or until edges begin to brownFor glaze, combine milk and extracts in a large bowlAdd sugar, whisk until glaze is smoothAs soon as cookies are removed from the oven, quickly immerse two or three at a time into the glaze.Remove with a slotted spoon or fingersPlace cookies on wire racks to drainQuickly top with sprinklesLet dry 24 hours before storing in airtight containersYield about 7 dozen | |
