Pennsylvania Dutch Cookie-Pies


1-1/2 c sugar

1/4 c shortening

1/2 c cocoa

1 egg

1 tsp vanilla

2 c sifted flour

1/2 tsp cream of tartar

1/2 tsp baking soda

1 tsp salt

3/4 c buttermilk

Fluffy Refrigerator filling (recipe follows)



Cream together sugar and shortening until light and fluffy

Beat in cocoa and egg

Add vanilla

Sift together flour, cream of tartar, baking soda and salt

Add alternately with buttermilk to creamed mixture

Mix well

Drop by teaspoonfuls on greased baking sheet

Bake at 375 for 10 to 12 minutes

Spread flat sides (bottoms) of cooled cookies with fluffy refrigerator filling and put together in pairs

If you like you can sprinkle filling with flaked coconut before putting together

Makes 26 cookie-pies



Fluffy Refrigerator Filling:

2-1/2 tbsp flour in a 1- quart saucepan.

Measure 1/2 c milk. Add a little milk to flour and stir to make a smooth paste

Add remaining milk, cook and stir until mixture thickens. Cool

In a small mixing bowl, cream together

1/2 c butter or shortening

1/2 c sugar

1/8 tsp salt

1 tsp vanilla

Until light and fluffy

Slowly add thickened flour milk mixture, beating constantly, until filling is light and fluffy

Makes about 1-3/4 cups
