Chocolate Red Chile Pepper Cookies


2 cups flour

1/8 teaspoon salt

1/2 teaspoon baking soda

1 teaspoon red chile powder or to taste

1 tablespoon powdered instant coffee

1 tablespoon hot water

3/4 cup softened butter

1-1/4 cups sugar

1 egg, slightly beaten

1 cup plus 1 tablespoon cocoa (preferably Dutch-process)



Mix together flour, salt, baking soda and chile powder, set aside

Dissolve coffee in the hot water and set aside.

In a medium mixing bowl, cream butter and sugar until light and combined



Add egg, dissolved coffee and cocoa, beat until thoroughly blended.

Add flour mixture a little at a time, beating after each addition until smooth.

Seal in plastic, refrigerate at least one hour



Preheat oven to 350

Roll out chilled dough on a floured surface and cut into shapes

Bake on an ungreased cookie sheet for 10 to 12 minutes until firm

Cool completely, and then glaze with Tangerine Glaze



Tangerine Glaze

Combine 2 cups powdered sugar, the juice of 2 tangerines and 2 tablespoons Clear Karo syrup.

With a mixer, beat until smooth and of desired consistency.

Tint desired color.
