Marshmallow Roll




1/2 cup Eagle Brand Sweetened Condensed milk

1/4 cup water

1/2 pound (about 32) regular-sized marshmallows cut into quarters

1/2 cup coarsely chopped nut meats

1/2 cup finely cut, dried dates

2 1/2 cups (about 30 crackers or 5 1/2 oz) find graham cracker crumbs

Whipped Cream, if desired



In medium-sized mixing bowl, blend together Eagle Brand Sweetened Condensed Milk and water. Stir in remaining ingredients except cream

Shape into a roll about 3 inches thick and 6 inches long.

Wrap and refrigerate at least 12 hours

Cut roll into 10 equal slices

Garnish with whipped cream

Chocolate - Marshmallow Cream Roll


6 egg yolks

6 tbsp Hershey’s cocoa

1 heaping c confectioner’s sugar

Dash of salt

1/2 c cake flour

1 tsp vanilla

6 egg whites, stiffly beaten



Beat the egg yolks until thick and lemon-colored, and add the cocoa, sugar, salt, flour and vanilla

(Mixture will be stiff)

Then fold in 1/4 of the stiffly beaten egg whites blend well

Fold in remaining egg whites and turn into a greased pan

Which has been lined with waxed paper

Bake in a moderate oven 350F for 20 minutes

Turn out onto a damp towel, roll up and let rest 1 minute

Unroll and re-roll without towel

Cool on rack covered with waxed paper

Fill with Marshmallow Peppermint Icing and cover with 1/2 recipe Bitter Chocolate Butter Icing

If desired, garnish with flowers made by cutting marshmallows into very thin strips, using candied cherries as center

Yield 12 servings



Marshmallow Peppermint Icing

2 tbsp water

1/2 c granulated sugar

1 egg white, beaten stiff

3/4 c marshmallow whip

Few grains of salt

1/4 tsp peppermint extract

Few drops red food coloring

Boil water and sugar together until it forms a soft ball in cold water 234F

Slowly pour hot syrup over beaten egg white, beating constantly

Add marshmallow whip,

Salt, extract and food coloring beat until cool



Bitter Chocolate Butter Icing

1/2 c butter

2 c confectioner’s sugar

2 tbsp light cream

4 sq Hershey’s baking chocolate, melted



Cream butter and sugar together, add cream and beat well

Gradually add melted baking chocolate, and beat thoroughly to reach spreading consistency

Additional cream may be needed

Magical Marshmallow Puff Pull-A Parts




1/2 cup sugar

1/4 cup flour

1-1/2 tsp cinnamon

2 (8 oz) cans refrigerated crescent dinner rolls

16 Jet puffed marshmallows

1/3 cup margarine, melted



Heat oven to 375

In small bowl, combine sugar, flour and cinnamon

Separate dough into 16 triangles

Coat each marshmallow with melted margarine

Roll in sugar mixture

Place a coated marshmallow on shortest side of each triangle

Roll up starting at shortest side of triangle, gently wrapping dough around marshmallow and rolling to opposite point

Pinch edges to seal

Coat each with melted margarine

Roll in sugar mixture

Place in 2 ungreased 8 inch round pans

Bake at 375F for 18 to 28 minutes or until deep golden brown

Immediately invert onto wire racks

Invert again onto serving plates

Cool slightly before serving

16 servings



Options

If desired, in small bowl, combine 1/2 cup powdered sugar

And 2 to 3 tsps milk, mix well

Drizzle on top

Egg Nog Mallow Dessert




4 cups miniature marshmallows

1/4 cup milk

2 eggs, beaten

1 tablespoon rum flavoring

1 cup heavy cream, whipped



Melt marshmallows with milk in double boiler

Stir until smooth. Gradually add eggs,

Cook 2 to 3 minutes, stirring constantly

Remove from heat, add rum flavoring

Chill until slightly thickened, mix until well blended.

Fold in whipped cream

Spoon into individual serving dishes

Chill several hours or overnight.

Garnish with additional whipped cream and toasted slivered almonds if desired



Variations Fold in chopped candied fruits



Layer with Chocolate flavored topping



Layer with chopped maraschino cherries
