Champagne Sodas



2 tablespoons chopped fresh fruit or 6 to 8 whole berries

2 to 4 scoops fruit sorbet or sherbet

2 teaspoons Cointreau

Champagne about 1/3 cup



Divide fruit and sorbet between 2 Champagne glasses. Add 1 teaspoon Cointreau to each, slowly fill glasses with champagne. Serve immediately

Yield 2 servings

Champagne Spritzer



1/4 cup Champagne, chilled

1 tablespoon amaretto, creme de cassis, peach brandy, or Triple Sec

Sparkling water or club soda, chilled



Combine Champagne and liqueur in a tall 12 ounce glass, fill with crushed ice. Fill glass with sparkling water, and serve immediately

Yield 1 serving

Champagne Punch




2 fifths champagne

2 fifths sauterne

2 fifths or more sparkling water

4 jiggers Curacao

4 jiggers Brandy

4 jiggers grenadine or sugar



Champagne, wine, and sparkling water should be iced before preparing punch

Place a large block of ice in a punch bowl

Pour in brandy, curacao, and grenadine.

Mix

Then add champagne and sauterne, pouring slowly

Last add sparkling water, stir gently

serves 60

Fruit Supreme with Pink Champagne




1 pint box strawberries, or 2 pkg (16 oz size) frozen whole strawberries

2 large grapefruit

3 large navel oranges

1 bottle (1 pint, 10 oz) pink champagne

1 pkg (8oz) pitted dates, halved or 1/2 lb fresh dates, pitted and halved

2 pints lemon sherbet



Wash fresh strawberries, drain

Remove hulls, cut any large berries in half



Peel and section grapefruit and oranges

Refrigerate fruit until it is well chilled, about 2 hours

(if using the frozen strawberries, thaw, and drain)

Also refrigerate champagne until ready to use



Combine fruit and dates in a large bowl toss lightly

Arrange fruit mixture in 12 dessert dishes

Top each serving with a small scoop of the lemon sherbet



Pour some of champagne over each serving

Serve at once, add rest of champagne as needed

Makes 12 servings



To serve as a Buffet Appetizer



Pack sherbet into a 1 quart mold, freeze until firm at least 3 hours

Unmold (loosen edge with sharp knife, dip bottom quickly in hot water, invert in center of dish)

Surround with fruit

Pour over some of champagne

Serve with rest of champagne

Pointsettia Punch




1 (750-milliliter) bottle champagne, chilled (about 3 hours)

3 cups cranberry-apple juice, chilled

1/4 cup thawed white grape juice concentrate

1/4 cup orange liqueur or Grand Marnier

Fresh Cranberries (optional)



Stir together first 4 ingredients in a 2 quart pitcher



Serve in champagne flutes.

Float fresh cranberries in each flute, if desired
