Coffee Pecan Pie
3 tbsp Instant Coffee
1 tbsp boiling water
3 eggs
1 cup corn syrup
2/3 cup sugar
1/3 cup butter, melted
1/2 tsp salt
1 cup pecan halves
1 9" unbaked pie shell
Whipped Cream (optional)
Preheat oven to 375F
In small cup dissolve instant coffee in boiling water
In large bowl, combine coffee mixture, eggs, corn syrup, sugar, butter and salt;
Beat well
Stir in pecans
Pour into unbaked pie shell
Bake for 40-50 minutes at 375F
