| Lemon Meringue Pie (Tart) 1 (9inch) pie crust1 cup plus 6 tbsp sugar, divided1-1/2 cups plus 3 tbsp water, divided1 tbsp butter4 tbsp cornstarch6 tbsp plus 1 tsp lemon juice, divided1 tsp grated lemon zest3 eggs, separated2 tbsp milk Place pie crust in pie pan, crimp and bake according to pkg or recipe directionsMix 1 cup sugar, 1-1/2 cups water and butter in a saucepanHeat over medium heatIn a small dish, mix 3 tbsp water and cornstarch; add to hot sugar mixture in saucepanCook until clear, about 8 minutesAdd 6 tblsp lemon juice and the zestCook for 2 minutesIn a bowl, beat egg yolks with milk add to the lemon mixture in saucepanBring to a boilLet cool then pour into baked pie shell Preheat oven to 350 In a mixing bowl or the bowl of a stand mixer, beat egg whitesAdd 6 tbsp sugar gradually and continue beating until stiff peaks formBeat in 1 tsp lemon juiceSpread meringue over lemon pie fillingBake for 13 to 15 minutesUntil meringue begins to turn golden brownServes 8 | |
