| Chocolate Cream Pie 1/2 cup sugar2 tbsp cornstarch 3 tbsp flour1/2 tsp salt1-1/2 cups milk, scalded2 egg yolks2 tbsp butter1/2 tsp vanilla2 egg whites3 tbsp sugar1-1/2 squares melted chocolate Mix sugar, flour, and salt in bowlStir in scalded milk return mixture to top of double boilerStir over boiling water until mixture has thickenedCover let cook while beating egg yolks Stir a little of the hot milk mixture into yolksStir diluted yolks into contents of double boilerAdd Chocolate to mixture cook till meltedCook 1 minuteRemove from the stoveStir in butter and vanilla and coolWhen cool, pour into previously baked cool shell and cover with a meringue made by beating the egg whites until they hold their shape, and then beating in the 3 tblsp of sugar graduallyPile lightly on pie, being sure it touches crust all around and bake in a slow oven 300F until browned about 20 minutes | |
