| Sausage Stuffed Peppers 1/2 cup KC Masterpiece Original Barbecue Sauce4 green, yellow or red bell peppers2 cups white rice, cooked1 cup corn kernels, frozen or canned1/4 cup carrot, shredded1 cup cooked chicken or pork sausage2 tbsp green onion, diced1/2 cup shredded Monterey Jack or Pepper Jack cheese, divided Cut tops of peppers off just below the stem and remove seeds.Place peppers upright in a microwaveable 8x8 inch baking dishCover with cling wrap and microwave on high 5 minutesSet aside, covered, while preparing filling In a large bowl, stir together rice, corn, carrot, sausage, green onion and 1/4 cup of the cheese with the KC Masterpiece Original Barbecue Sauce, Spoon 1/4 of the rice mixture into each pepperTop with remaining cheeseMicrowave on high 5 to 7 minutes or until peppers are softened and cheese is melted Oven MethodPreheat to 375FCover filled peppers loosely with foil and bake 20 minutesUncover and sprinkle peppers with cheeseBake 10 minutes longer | |
