| Rice and Vegetable Bake 1/2 cup long grain rice1 small yellow onion1 small red pepper1 stalk celery1 small bunch parsley1/3 cup walnuts or pecans3 tbsp butter or margarine3 eggs1 cup milk or half and halfDash of salt and pepperDash of grated nutmeg optional Cook rice according to pkg directionsPeel and chop onionRinse pepperRemove seeds and membranesDiceCoarsely chop celery and parsleyReserve 2 tbsp chopped parsley for garnishChop walnuts or pecansCombine cooked rice with vegetables and nuts In a saucepan, melt butterIn a bowl, beat eggs and milk or half and halfSeason with salt, pepper and nutmeg, if usedAdd melted butterStir to combinePour egg mixture over rice mixtureBlend wellPlace mixture in a lightly greased baking pan or tube pan Bake at 350 for about 1 hour or until set and golden brown on topLet cool for at least 5 minutesLoosen edges with a knifeInvert onto warm serving platterGarnish with reserved parsley | |
