Rice and Vegetable Bake




1/2 cup long grain rice

1 small yellow onion

1 small red pepper

1 stalk celery

1 small bunch parsley

1/3 cup walnuts or pecans

3 tbsp butter or margarine

3 eggs

1 cup milk or half and half

Dash of salt and pepper

Dash of grated nutmeg optional



Cook rice according to pkg directions

Peel and chop onion

Rinse pepper

Remove seeds and membranes

Dice

Coarsely chop celery and parsley

Reserve 2 tbsp chopped parsley for garnish

Chop walnuts or pecans

Combine cooked rice with vegetables and nuts



In a saucepan, melt butter

In a bowl, beat eggs and milk or half and half

Season with salt, pepper and nutmeg, if used

Add melted butter

Stir to combine

Pour egg mixture over rice mixture

Blend well

Place mixture in a lightly greased baking pan or tube pan



Bake at 350 for about 1 hour or until set and golden brown on top

Let cool for at least 5 minutes

Loosen edges with a knife

Invert onto warm serving platter

Garnish with reserved parsley
