| Orange-Sweet Potato Cups 8 large oranges4 large sweet potatoes1 cup sugar2 eggs1 teaspoon vanilla extract1/3 cup milk1/2 cup butter, softened1/2 cup packed brown sugar2 1/2 tablespoons all purpose flour1/2 cup finely chopped walnuts2 tablespoons butter, softenedFresh parsley springs Cut a thin slice from the bottom of each orange so it will not rollCut a 3/4 inch slice from the top of each orangeUsing a curved grapefruit knife, gently remove the pulp, leaving the shells intact(Reserve the pulp for other uses)Set asideIn a large saucepan, cook the sweet potatoes in boiling water to cover for 25 to 35 minutes, or until tender when pierced.DrainLet cool to the touch; peel and mashPreheat oven to 350. In a large bowl, combine the sweet potatoes, sugar, eggs, vanilla, milk, and 1/2 cup butter; beat until smoothSpoon into the orange cupsPlace the orange cups in a baking panIn a small bowl, combine the brown sugar, flour, walnuts, and 2 tablespoons butterSprinkle the mixture over the orange cupsBake for 10 to15 minutes.
