Homemade Noodles




1 egg

1/4 cup cold water

1 tablespoon olive oil

Pinch Salt

Flour



Beat the egg, water, oil and salt together in a bowl.

Using a table form, gradually stir in just enough flour to make soft yet knead able dough

Turn the dough out onto a lightly floured surface and knead until it is glossy and malleable.

Cover with plastic wrap and allow to rest for about 15 to 20 minutes

Cut the ball of dough in half and roll one piece to about 1/8 inch thickness,.

Lightly flour both sides then loosely roll the sheet of dough up jelly roll fashion.

Using a very sharp knife (not serrated) cut into 1/4 inch wide noodles.

Set aside and do the same with the remaining piece of dough.

When the noodles are all cut, gently shake them apart and allow to rest on the work surface for about 10 minutes before putting them into boiling stock. When the noodles are done to your liking, drain well and add a dollop of butter or a splash of olive oil.
