Gingered Beets

Gingered Beets

1 can sliced beets, drained

Mix together in a saucepan

1/2 c sugar

1 tbsp cornstarch

3/4 tsp ginger

1/4 tsp salt

Blend in

1/2 cup cider vinegar

Stirring constantly, bring rapidly to boiling and cook 3 minutes

Add to sauce

The beets and 2 tbsp butter or margarine

Cover and simmer over low heat about 10 min

Or until beets are thoroughly heated, moving and turning occasionally

Sprinkle with Chopped Parsley
