Easy Riders with Rice




2/3 cup long grain rice

Water, salted

2/3 cup frozen peas, thawed



8 slices canned pineapple

8 slices bacon

Dash cayenne pepper

Sweet and sour sauce, optional



Cook rice according to pkg directions

At the end of cooking time add peas

Keep warm



Meanwhile, prepare 'Riders'

Drain pineapple slices

Cut into halves

Cut bacon slices in halves

Wrap each pineapple slice in a bacon slice

Fasten with tooth picks



In a hot skillet quickly sauté 'riders' until lightly browned and crispy

Sprinkle with a little cayenne pepper



Place rice on a hot serving plate



Place 'Riders" onto and serve immediately



Calories 240 per serving
