| Carrot Stuffed Squash 4 large crookneck squash4 large carrots, peeled and cut into 1 inch pieces2 tbsp butter, divided1 cup chopped onion1 tsp honey1/2 tsp cinnamonSalt to tasteFreshly grated Parmesan cheese Preheat broiler Cook squash in large saucepan of boiling water until tender, about 8 minutesUsing slotted spoon, remove and drainHalve lengthwise and scoop seeds from centersPlace halves on broiler panSet asideCook carrots in same saucepan of boiling water until soft, about 15 minutesMeanwhile, melt 1 tbsp butter in medium skillet over medium heatAdd onion and stir until golden and beginning to brown, about 10 minutesSet asideDrain carrotsTransfer to food processor or blenderAdd onion, remaining butter, honey, cinnamon and saltPureeMound mixture in squashTop with Parmesan cheeseBroil until golden, about 5 minutesServes 8 | |
