| Cheesy Turnips and Carrots 3 cups diced peeled turnips2 cups sliced carrots1/4 tsp ground ginger3/4 cup water1 tsp salt, divided1/2 cup chopped onion1/2 cup diced celery3 tbsp butter3 tbsp all purpose flour1/4 tsp pepper1-1/2 cups milk1 cup (4oz) shredded cheddar cheese In a saucepan, combine turnips, carrots, ginger, water and 1/2 tsp saltCover and cook over medium high heat for 10 to 15 minutes or until vegetables are tender, drain and reserve liquidSet vegetables aside In a skillet, sauté onion and celery in butter until tender, stir in flour, pepper and remaining saltAdd milk and the vegetable liquid, bring to a boilCook and stir until thickened and bubblyStir in cheese until melted, stir in the vegetables and heat throughYield 4 to 6 servings | |
