Guacamole

Guacamole

6 avocados

1/2 cup lemon juice

1 (4oz) can whole green chilies, rinsed, seeded and finely chopped

1 medium onion, chopped

2-3 tbsp mayonnaise

Salt and pepper to taste

Dash of liquid hot sauce

2 or 3 tomatoes, seeded and diced

Peel and pit the avocados, mash them with a fork while blending in lemon juice

Stir in remaining ingredients

Makes about 4 cups

Guacamole freezes well, but leave out the tomatoes

To serve

Thaw drain off excess moisture and stir in the chopped tomatoes

Chopped pimentos may be used in place of tomatoes

If you like a touch of heat, use cayenne pepper
