Creamy ColeSlaw




1 large head cabbage, shredded or 1 (16oz) bag pre shredded slaw mix



Dressing

1 cup sugar

1 cup sour cream

1 cup mayonnaise or salad dressing

1 tsp celery seed

1 tbsp rice vinegar or to taste



Place shredded cabbage in a large bowl

In a small bowl, mix sugar, sour cream, mayonnaise, celery seed and rice vinegar

Pour over cabbage and mix well.

Store in refrigerator at least 30 minutes or until serving time

Serves 4

Cole Slaw My Mother’s Recipe



1 head cabbage

1 onion

1 green pepper

Shred and mix

1 cup boiling water or more to cover

And let set 1 hour, drain

And pour following over above

Heat 1 cup vinegar

1 cup sugar

1 tbsp celery seed

1 tsp mustard

And pour over Cabbage

Keeps a long time

And can be made 1 to 2 days before

German Cole Slaw




1 head white cabbage

2 quarts boiling water

2 onions, shredded fine

1 or 2 green peppers, shredded fine

1/4 cup vinegar

2 egg yolks, beaten

1 tsp salt

1/2 tsp pepper

3 tbsp olive oil

1 cup sour cream



Wash cabbage, slice or cut fine

Scald 5 minutes and drain well through colander, press out all water

Mix with onions, green peppers, and vinegar

Beat eggs, salt, and pepper together, add oil gradually, beating steadily

Pour over cabbage mixture, stir well

Pour sour cream over and stir until evenly mixed

Serves 4 to 6

Cole Slaw




1 small head cabbage



Dressing

2 tbsp vinegar

6 tbsp salad oil

Dash celery salt

Dash freshly ground pepper

1 tsp grated onion



Trim off outer cabbage leaves

Cut cabbage into wedges

Shred finely



Transfer shredded cabbage into a large bowl

Cover with ice water

Let soak for 40 minutes



Drain cabbage well

Pat dry with a kitchen towel or paper towel

Transfer to serving bowl



For Dressing

Combine all ingredients in a bowl

Pour dressing over cabbage

Toss lightly



Let salad stand for a short time for flavors to blend

Cabbage Slaw




1 head of Cabbage

Sour Cream Dressing



Quarter cabbage and remove core.

Slice coarsely into blender container.

Fill to 3-1/2 cup mark with cabbage; add water just to cover.

Cover and turn to high speed just until cabbage is chopped (about 5 seconds)

Drain thoroughly in a colander. empty onto a paper towel to absorb excess moisture

Repeat process with any additional cabbage.

Mix chopped cabbage with sour cream dressing in a bowl

Makes about 1-1/4 cups chopped cabbage from each containerful.

1/4 cup vinegar

3 tablespoons sugar

1-1/2 teaspoons salt

1 teaspoon celery seed



Put ingredients into blender container; cover and blend on slow speed until smooth.

Makes about 1-1/4 cups

Old Fashioned Cole Slaw

  • 2/3 cup vinegar
  • 1/2 cup whipping cream
  • 2 large eggs, lightly beaten
  • 1/2 cup sugar
  • Pinch of salt
  • 1 1/2 tablespoons butter or margarine, cut into pieces
  • 1 (2-pound) head cabbage, shredded


Combine first 5 ingredients in a small, heavy saucepan; cook over low heat, stirring constantly with a wire whisk, 8 to 10 minutes or until thickened (mixture will appear curdled until it thickens). Remove from heat. Add butter, stirring until it melts. Pour over cabbage; toss gently to coat. Cover and chill. Yield: 8 to 10 servings.

Sour Cream Carrot & Cabbage Salad




1 cup sour cream

2 tsp olive oil

1 tsp lemon juice

1/2 tsp salt

2 cups finely shredded red cabbage

4 medium carrots, scraped and shredded

1/2 cup minced green olives

2 tbsp minced green onions



Blend sour cream, olive oil, lemon juice and salt

Combine cabbage, carrots, olives and onion

Pour sour cream mixture over vegetables and toss lightly

Chill

Serves 6 to 8

Squash Slaw




2 small yellow summer squash, julienne

2 small zucchini, julienne

1 small sweet red pepper, julienne

1/3 cup sliced onion

3 tbsp vegetable oil

2 tbsp cider or white wine vinegar

1 tbsp mayonnaise

1 tsp sugar

1/2 tsp dill weeds

1/2 tsp garlic salt

1/4 tsp celery salt

1/4 tsp pepper



In a large bowl, combine squash, zucchini, red pepper and onion. In a small bowl, combine remaining ingredients, mix well

Pour over squash mixture and toss in coat

Cover and refrigerate

Serve with a slotted spoon

Yield 10 servings



One 1/2 cup serving (prepared with cider vinegar and fat free mayonnaise) equals 52 calories, 0 cholesterol, 4 gm carbohydrates
