Blueberry Lime Imperial

1-1/2 cup reconstituted frozen limeade

1 (3 oz)pkg lime flavor gelatin

1 cup heavy cream, whipped

1 cup frozen blueberries, thawed and drained

Bring 1 cup limeade to a boil

Dissolve gelatin in hot limeade.

Stir in remaining 1/2 cup limeade

Chill until thick and syrupy

Beat with mixer until light and fluffy

Fold in cream and blueberries

Turn into a lightly oiled 5 cup mold

Chill until set

Makes 4 to 6 serving

Cottage Cheese Jewel – Cap Salad

2 envelopes unflavored gelatin

½ cup water

2 cup boiling water

½ cup lemon juice

No calorie sweetener

Few drops green food color

1 ½ lbs cottage cheese, sieved (skim milk)

Soften gelatin in water

Add boiling water

Stir well till dissolved, cool

Add lemon juice and sweetener

Tint ¼ cup of mixture pale green pour into 1 quart mold

Chill until firm

Chill remaining mixture until thick as unbeaten egg whites, blend in cottage cheese

Carefully pour cheese mixture over set layer in mold

Chill until firm 3 to 4 hours

Limelight Vegetable Mold
(Mom’s recipe)

2- 3oz pkg lime flavored gelatin

2 cups sour cream

2 cups shredded carrots

2 cups diced celery

1/4 cup chopped pimento

Carrot curls and celery fans for garnish

Early in day

In medium bowl, dissolve gelatin in just 1-1/2 cups boiling water

Chill until the consistency of unbeaten egg whites

With mixer on low, beat gelatin for a min;

Until smooth

Beat in sour cream until smooth

Fold in remaining ingredients.

Except garnish

Pour into 1 quart mold

Chill until firm

Garnish with carrot curls etc.

8 to 10 servings

Lime Gelatin Salad

1 pkg (6oz) lime gelatin

1 cup boiling water

1 pkg (8oz) cream cheese, softened

1/2 tsp vanilla extract

1 can (15oz) mandarin oranges, drained

1 can (8oz) crushed pineapple, drained

1 cup lemon lime soda

1/2 cup chopped pecans

1 carton (8oz) frozen whipped topping thawed, divided

Dissolve gelatin in water

In a mixing bowl, beat cream cheese until fluffy

Stir in gelatin mixture and beat until smooth

Stir in vanilla, oranges, pineapple, soda and pecans

Chill until mixture mounds slightly when dropped from a spoon

Fold in 3/4 of the whipped topping

Pour into a 13x9x2 inch dish

Refrigerate for 3 to 4 hours or until firm

Cut into squares

Garnish with the remaining whipped topping

Yield 16 to 20 servings

Pacific Lime Mold
From My Aunt Jane

1 large box lime Jell-O
1 cup hot water
(Chill with juice from Pineapple and beat until frothy)

9 oz crushed pineapple
1 cup cottage cheese
1 tsp horseradish
1/2 cup salad dressing
(add to above and refrigerate to set)
