Brown Gravy for Ham




1/4 cup unsifted all purpose flour

1/4 cup dark brown sugar, firmly packed

1-1/2 cups cooking liquid from ham



In medium saucepan, over low heat brown flour, stirring constantly, until deep golden

Remove from heat

Stir in sugar

Gradually add ham liquid, stirring to make a smooth mixture

Bring to boiling, stirring constantly

Then stir into ham and apples

Makes about 1 cup

Turkey Gravy




1 tablespoon butter or margarine

3 tablespoons flour

1/4 teaspoon salt

1 1/2 cups turkey broth



Melt butter or margarine over low heat, mix in flour and salt, heat and stir until bubbly. Add broth slowly, stirring constantly. Cook over low heat, stirring constantly, for at least 13 minutes. Makes six 1/4 cup servings.

Giblet Gravy




1 tablespoon butter or margarine

3 tablespoons flour

1/4 teaspoon salt

1 1/2 cups turkey broth

1/2 cup chopped, cooked giblets



Melt butter or margarine over low heat, mix in flour and salt, heat and stir until bubbly. Add broth slowly, stirring constantly. Cook over low heat, stirring constantly, for at least 13 minutes. Add the Giblets to the gravy heat for a few minutes to blend flavors. Makes six 1/4 cup servings.

Tomato Gravy




2 tblsp butter or margarine

2 tblsp all purpose flour

1/3 cup beef broth

1 (8oz) can tomato sauce

1/4 tsp salt

1/4 tsp pepper



Melt butter in a small sauce pan, whisk in flour, and cook, whisking constantly 1 minute. Gradually whisk in broth and tomato sauce. Reduce heat, and simmer until thickened Whisk in salt and pepper.
